Chopped Salad

If you are someone who needs exact items & exact amounts, this receipe is going to drive you crazy. In my book, a chop salad is the perfect opportunity to use up whatever veggies you have on hand and the perfect opportunity to use up the ones that are the fritz.


You can determine how much you use based on how many people you are serving. If it's just you, I would recommend making more for tomorrow. Chopping these veggies is what I call an act of love... make it worth it!


Like I've said, this salad is really a blank canvas. I * the items that i used on the Junky Janko Market Hits the Road Salad!





First up, you need to decide what lettuce combo you want. Here are examples. On the Junky Janko Hit's the Road Bus Trip, I used Purple Cabbage, Baby Spinach and Romaine Lettuce.

  • Romaine Lettuce

  • Spinach - Regular or Baby

  • Cabbage - Purple or Green

  • Arugula

  • Seriously, whatever type of lettuce you have!


Decide on your veggies, here is just a list of what i used on the bus trip but really, you can use anything. And, again! Use what you have!

  • Sweet peppers

  • Onions - Red*, White or Yellow

  • Green Onions

  • Peas

  • Cucumbe

Additional Protein

  • Chick Peas (used on bus trip)

  • Chicken

  • Salmon

  • Steak


Now, don't forget to amp up that flavor. Add in some fresh herbs. In this case, fresh is necessary.

  • Parsley (used on bus trip)

  • Cilantro

  • Micro Greens

  • Dill

  • Basil


Want Fruit? Go for it! Imagine Stawberries with chicken and a balsamic dressing!


Directions:

You want everything chopped, and I really mean chopped. Chop like crazy on your lettuce combo. A Really small dice on the veggies. Minced the fresh herbs. Toss everything together. Keep the dressing seperate until you are ready to eat. And now, the fun part - you can eat this like a salad, but my recommendation would be to do that along side some of your favorite chips. Everything is better when you can dip it!
