This is my go to dressing base for almost every salad. It's so simple and super delicious! And again, like almost everything i write about, you can swap out flavors. Check out the bottom for variations & ideas!
Ingredients
1 C. Olive Oil
1/2 C. Red Wine Vinegar
2 T. Honey
2 T. Mustard, click for my favorites
Lemon Juice from half a lemon
1/4 - 1/3 C. Grated Parm
2-4 Cloves of Chopped Garlic, our family loves garlic so we go on the higher side
Salt & Papper to taste
*Seasonings - do be afraid to throw a few large dashes of your favorite seasoning in here. Think italian, parmesan garlic, oregao, basil, etc. Pick your fav, match it to your salad and throw some in!
Directions:
I toss everything except the cheese into a mason jar and shake it!! Well, you know what's better than a mason jar? I jar from a Jam or Jelly that you saved! Don't throw those things way! They make great cocktail shakers too!! Taste test it. What does it need? More oil? More Vinegar? Add it now! But only add a splash at a time! Once you've perfected the taste to your liking, add the grated parm. Shake, shake, shake. Pour onto your salad. This stores really well in the fridge. However, don't be alarmed if it starts to solidify. It's just the honey & the oil. Let sit at room temp a little bit before you use it again!
Variations:
Vinegar: Depending on the salad, I will swap out the red wine vinegar for a balsamic viegar. Balsamic is great for salads that have fruit - Think grilled chicken, fresh strawberries on a bed of fresh lettuce with pickled onions!
Mustard: While i love a good mustard in the dressing, I also love a good jam. Our family favorite is swapping the mustard for a hot pepper jelly. It's a sweet, subtle heat. And while you would like that the jam offers the sweet aspect, it doesn't offer enough to skip the honey. So always keep the honey!
